YouTube can support picture-in-picture, also called PiP, with iOS 14.5. If you use the beta version of Apple’s upcoming iOS update, the support is there – but it’s unclear if we will see it when the sharp version is released.
What does it mean that YouTube can support picture-in-picture? This means that the video itself can be lifted out of the app and placed as a standalone, removable, box above other apps. Perfect when you want to watch a video and do something else at the same time.

It is the website Macrumors that is the first to draw attention to the much-anticipated support. Already with iOS 14 released in September, the support was there, but in limited form and for a limited number of apps.
The only reason YouTube does not support it today is because Google opted out. And not just in its app, but also in the browser version.
Note that the support available in the beta version of iOS 14.5 is of course not guaranteed to remain when the sharp version is released.
It is never nailed down until the finished version has rolled out, and it could potentially be a bug at Google that causes the feature to be activated prematurely.
